I just made Cara’s sweet potato curry soup, and it was really good! Very easy to make, too. I would recommend it! If you know me IRL and would like to try some, let me know because I have a lot left.
I had been wanting stew for a while, so I made Vegetarian “Beef” and Guinness Stew for dinner tonight, and it was pretty good! I halved the recipe because seitan is expensive (going to try to make my own one of these days), but used the same amount of flour as the regular recipe and perhaps a cup each of Guinness and vegetable broth. If you make it, I would definitely recommend going half and half on the beer and the broth, because even that way it’s somewhat bitter. I’m going to make it again for my family when I go home for Christmas, and I think it will be even better then because my main problem this time was that the pot I was using was too big so not all of the vegetables could be submerged in the broth at once.
